The finest Champagne or ‘Sparkling Wine’ as it is referred to here in California, is made from primarily two varietals – Pinot Noir and Chardonnay. Starting with exceptional Pinot Noir and Chardonnay grapes, we employ traditional winemaking methods to ensure our sparkling wine meets the highest of standards.
Allowing the wine to age on the lees for at least three years, our sparkling wines develop complex, toasted nut characteristics that can only be described as elegant. Extra time to develop these complexities allows us to produce two different sparkling wines—Blanc de Blancs (100% Chardonnay) and Blanc de Noirs (100% Pinot Noir)—each complemented by refreshing hints of honey and citrus, all are rich and satisfying.
Bright white cherry attracts the nose and palate. Wild strawberry melds interestingly with pink grapefruit—both are subtle and restrained. A lingering Pomelo finish. Clean, bright, and a favorite amongst friends!
Aromas of lemon bar and basil are met by doughy baked bread. On the palate, a smooth yeast compliments the initial note allowing for a lasting clean finish.
Crusty baked bread dominates the initial aromas. A fragrance of citrus and white peach merge with lemon thyme and a hint of basil. On the palate, gooseberries and leche nut complement each other to a lingering finish.
Sweet aromas of white and yellow peach are surrounded by purple basil and hibiscus. The grapes were left on the lees for three years, creating a truly extraordinary wine.
