The finest Champagne or ‘Sparkling Wine’ as it is referred to here in California, are made from primarily two varietals – Pinot Noir and Chardonnay. Starting with exceptional Pinot Noir and Chardonnay grapes, we employ traditional winemaking methods to ensure our sparkling wine meets the highest of standards. Allowing the wine to age on the lees for at least three years, our sparkling wines develop complex, toasted nut characteristics that can only be described as elegant. Extra time to develop these complexities allows us to produce three different sparkling wines—Blanc de Blanc (100% Chardonnay), and Blanc de Noir (100% Pinot Noir) —each complemented by refreshing hints of honey and citrus, all are rich and satisfying.
2014 Blanc de Blanc - A delicious mineral meets lemon attack melds with green apple and sea-spray. An intriguing salinity lingers with anjou pear flavors and white peach. A fine bubbled mousse delivers a complex nose and flavors.
2014 Blanc de Noir - Sweet aromas of white and yellow peach are surrounded by purple basil and hibiscus. There is a pleasant pith like bitterness that grounds the strawberry and cherry flavors. Our wines will be available to mailing list members on a limited basis starting this Winter 2018.
