2018 Syrah Wine
The grapes were harvested in the coldest hours of early morning, before sunrise. Sorted meticulously in the field, they were sorted once more in the cellar before being de-stemmed into 1½ ton open top fermenters. Once fermentation began, the grapes were punched down by hand twice a day to freshen the fermentation and gently extract flavor and color. In total, the wine was left on the skins for 28 days.
The wine was then gently pressed directly to 500 liter barrels called puncheons for aging. The barrels were a combination of one year old and neutral oak, allowing for a mild oak influence in the flavor and structure of the wine. Aged for 18 months before bottling, the wine retains a freshness to the fruit, while exhibiting a substantial tannin structure.
